Recipe: “Creamy” Vegan Spinach

Bon appetit!

1lb of spinach

1 cup of chopped cauliflower

1 clove of minced garlic

2 tablespoons of olive oil

Salt (to taste)

 

Sauté spinach with garlic, olive oil and salt

 

To prepare the cauliflower “cream”

Boil cauliflower until soft (keep the water)

Take 8oz of the sautéed spinach and the cauliflower, and add to a blender. Blend to a creamy consistency (add water from the boiled cauliflower as needed)
