Recipe: Taco Kale

Ok so I was riding in my car and I had a taste for a Taco Salad without any meat, but I wanted texture, more than just beans and here is what I came up with:


What You Will Need:

1 bunch of Kale



3Tbl Olive Oil

2 cup cooked Quinoa

1 can Organic Red Beans

1 can Organic Cannellini Beans

1/2 cup organic crushed tomatoes

Chicken Stock

Crushed Tomatoes

1 tsp Cumin

1/2 Cayanne Pepper

1 tsp Chili powder or Chipotle pepper powder

1 Bay Leaf

What to do:

The Kale

Chop cilantro and add to a bowl with olive oil, Lime and salt.

Pour mixture over kale and massage  thoroughly(this will soften the kale up)

Let it rest

The Beans

Add Beans, Cumin, chili powder, cayenne, salt, bay leaf , crushed tomatoes, and chicken stock to a pot and simmer

Mix bean mixture and quinoa

Plate the massaged kale and top it with the bean quinoa mixture

Add your favorite toppings.   I chose Jalapeño peppers, fresh corn, tomatoes, avocado, more cilantro and a non-dairy sour cream.
