Ingredients
Cilantro (to taste)
1 Head of Cauliflower
1 Fresno Pepper
2 Ears of Fresh Corn
2 Cloves of Minced Garlic
Cauliflower
Cut the cauliflower into steaks
Drizzle generously with olive oil and salt & pepper
Roast at 400 degrees until done (they will be a bit charred that’s how you know)
Corn Salsa
Take the kernels off the cob
Chop the Pepper
Add minced garlic and sauté (use salt & pepper to taste)
Once cooked, add the cilantro
Top the cauliflower with the Corn Salsa and devour!!!! All in the name of healthy eating!
